Chicken Noodle Soup ~Family Meals Under $20

To the many looking to feed the entire family and not break the bank, this is the blog you will need to keep your eyes on. A hearty meal that will not only feed the entire family for a night, but a meal that will last longer than a day or two is what this blog will help you achieve. When money is tight, or you just want to save a few dollars, a home cooked meal with leftovers is the way to go. Below I have provided a full recipe and even a step by step video via Snapchat and/or Instagram Stories and YouTube to make this one of the easiest recipes you can follow. I call this branch of my blog #simplyEdible. Here I plan to feature many "Quick Snap Tutorials" with easy step-by-step instructions, along with pictures and videos, to make it easy for anyone to follow. Hearty Chicken Noodle Soup

Chicken Noodle Soup, Quick Snapchat Tutorials with Krissy, #simplyEdible | Food, #simplyMINO, www.minovet.com

Prep time: 15 minutes | Cook time: about 1 hour


6 servings / 12 servings

Butter - 1 Tbsp / 2 Tbsp

Carrots (chopped) - 1 cup / 2 cup - (about 3 carrots)

Celery (chopped) - 1 cup / 2 cups - (about 3-4 stalks)

Garlic (minced) - 1/2 Tbsp / 1 Tbsp - (3 cloves)

Onion (chopped) - 1/2 cup / 1 cup - (about1 whole)

Chicken Broth - 5 cups / 10 cups

Chicken (chopped or shredded) - 1 lbs / 2 lbs (about 3-4 single breasts)

Herbs de Provence (recipe to make your own below) - 1 Tbsp / 2 Tbsp

Salt & Pepper (more or less to taste) - 1/2 Tbsp / 1 Tbsp

Extra Wide Egg Noodles - 1/2 bag / Whole 1 lb. bag

Additional ingredients if you prefer to make your own chicken broth with boiled chicken

  • 2-3 stalks of celery (cut in half)

  • Half of an onion (uncut)

  • 2-4 bouillon cubes (depending on strength of seasoning you desire)

-You can also add a carrot, garlic cloves, and/or bell peppers for a more robust flavor

Boiled Chicken & Broth

  1. Pour water into large pot and bring to a boil

  2. Add bouillon cubes, vegetables for broth, salt, and pepper to the water

  3. Add chicken and bring back to a boil.

  4. Once boiling, cover the pot, reduce heat, and simmer for 10-30 minutes depending on the chicken pieces being cooked (cubed chicken 10-15 minutes, skinless & boneless 20-25 minutes, Bone in breast 25-30 minutes)

  5. Once the chicken is done, remove from the pot and set to the side to rest and cool before cutting or shredding for the soup

  6. Strain your broth into a bowl and set to the side until we are ready to add it back to the pot

Discard the vegetables and spices used to add flavor to your broth along with the fat and any pieces of the chicken you choose to not to use. Some like to use the cooked veggies. I toss them because they will turn to mush in the process of cooking your noodles.

Chicken Noodle Soup

  1. Melt butter in a large pot

  2. Add onions and celery until softened

  3. Once softened, add garlic, carrots, and herbs - add additional salt and pepper to taste

  4. Add one bag of extra wide egg noodles, chopped or shredded chicken (cooked), and the chicken broth

  5. Bring soup to a boil

  6. Once boiling, cover with lid, reduce heat, and simmer for 25 minutes

  7. Lessen time by 5-7 minutes for a firmer noodle

  8. Serve with your favorite crackers or baguette and enjoy!

Note: If you don't have or cannot find Herbs de Provence, you can make your own, or just substitute with Oregano, Basil, and Rosemary. One teaspoon each for a smaller pot, 2 teaspoons each for a larger pot. Add more for more flavor as needed. Below I have added a recipe to make enough to store and add to your spice cabinet. It goes well with any poultry dish or roast.

2 Tablespoons each - Yields 1 cup

Dried Thyme

Dried Savory

Dried Oregano


Dried Marjoram


Lavender Flowers (optional)

Ground fennel (optional)
